Broccoli and Potato Balls Recipe

Ingredients:

1 small sweet potato
3 small potatoes
1 large head of broccoli
1 teaspoon of garlic
tablespoon of chopped parsley
3 eggs
1 cup of bread crumbs
1 cup of grated cheese
tablespoon of hemp seeds (optional)
tablespoon of chia seeds (optional)
 salt & pepper to taste (optional)

Method:

  1. preheat oven to 180’C
  2. boil a pot of water
  3. wash, peel and chop veggies.
  4. blanch veggies in boiling water for a few minutes
  5. Take veggies out and shock them with cold water to stop the cooking process
  6. blend veggies in a food processor until you have small coarse pieces (NOT a paste) add processed veggies into a bowl and add all the other ingredients
  7. mix well
  8. line a baking sheet with paper
  9. roll mixture into small balls
  10. Bake at 180’C for 25 minutes (times may change depending on oven) 


This recipe makes 24 balls and can be frozen to be consumed later.
