Veggie Loaded Chicken Nuggets

Ingredients:

 1 carrot

1 onion

1 zucchini

1 clove of garlic

1 head of broccoli

500grms chicken mince

salt and pepper

2 eggs

1 cup of breadcrumbs

oil for cooking

Method:

  1. In a blender or Thermomix add all the veggies and garlic and blend until fine. 
  2. Add the chicken mince, salt, pepper, eggs, and half the cup of breadcrumbs to the blended veggies and mix well. 
  3. form into 50c piece sized balls and flatten slightly while rolling in the remaining breadcrumbs. 
  4. Shallow fry in your oil of choice and serve with yogurt, tomato sauce or mayonnaise.
